Spiced Roasted Seeds and Nuts


On our new prescribed diet, my husband's food options are limited to items that are free of gluten, sugar, soy, dairy, and alcohol. That includes anything fermented like soy sauce or vinegar. You are probably thinking what our friends and family ask when they look at us in shock and say, "What CAN he eat?". It's pretty much a paleo diet, or a cave man diet. Basic, non-processed ingredients without the preservatives, pesticides, and hormones that we put into our food these days. Organic meats and greens, cold-pressed olive oils, seeds, nuts, quinoa, millet, brown rice, spices, and herbs are the foundation of our meals. The limited options have actually been a motivating factor in finding new tasty ways to spin simple ingredients. A staple snack like raw nuts can turn into a tasty array of flavors when you roast them using different spices and seasonings. I've been making a big batch of these over the weekend so Will has a variety of nuts to snack on throughout the week between his cave-man diet meals.



Ingredients:

-Raw nuts + seeds 
-Cold-pressed extra virgin olive oils 
-Sea Salt
-Curry Powder
-Turmeric
-Cayenne Pepper
-Black Pepper
*Mix and match different oils and spices to create your favorite combinations. 




Step 1- Preheat your oven to 375 degrees. 

Step 2- Drizzle a few tablespoons of olive oil into a baking pan.




Step 3- Add in enough nuts or seeds to cover the bottom of the pan and drizzle in more olive oil while stirring it in. You'll want a nice, light coat, but don't oversaturate. 




Step 4- Sprinkle on your preferred spice or seasoning and stir so that your mixture is evenly covered. 

Step 5- Put in the oven for 10 minutes. Every roasted nuts recipe has a different degree and time, and everyone's internal oven temperature is different, so check them after 5 minutes and stir them around and take a whiff. Your nose will tell you when they are  ready! 

Step 6- This is a hard one, but allow the nuts to cool for several minutes before eating. 




I like to do a few different dishes at a time. Pictured above and below I have:

-Almonds with garlic infused olive oil and black pepper
-Pumpkin seeds mixed with olive oil and salt
-Pumpkin seeds with olive oil, cayenne pepper, and sea salt
-Almonds with garlic olive oil, turmeric, sea salt, and sesame seeds
