Citrus Salad Redux


A couple of weeks ago Joanna Goddard posted a mouth-watering Citrus Salad on Cup of Jo, made and shared by Erin Gleeson from The Forest Feast. It looked so delicious that I posted it on MAKE in hopes that would assure I would actually remember to make it. 


I couldn't make it a week without trying this myself. I stuck to Erin's original recipe as much as I could, but had to make some changes to make this work for Will's new diet. I switched out the orange for thin organic apple slices and even a couple of lemon slices. I added raw fennel by cutting the bulb into thin slices on the diagonal. This was my first time trying fennel and it was so fresh and delicious I have cooked with it twice since. I LOVE discovering new ingredients!



I recommend going heavy on the mint and basil for no other reason than IT IS DELICIOUS! I drizzled in some cold-pressed olive oil and sea salt, and we ate the refreshing spring citrus salad over an Elton John record.


Thank you Joanna and Erin for the recipe, I'll continue to make different versions of this throughout the spring and summer! It was great to see that even on the restricted diet we can see recipes we want to try and bring them into fruition with a few simple tweaks and changes.
